Quiche Lorraine (Lion House Recipe)


This was made by my friend, Suzanna. I just joined a dinner group. There's six of us and once a month we each make six each of two different meals (just the main dish), freeze them, then get together and exchange. So I come home with 12 frozen meals for the month. We'll see how it works.

This quiche was one of the meals and we loved it. She made one with peppers and onions, and one plain. The kids had to make sure I got a copy of Suzanna's recipe. So, thanks Suzanna!

1 9 inch unbaked pie crust
1 C. shredded swiss cheese (or cheese of your choice)
6 slices bacon, cooked and crumbled
1/2 C. ham, minced
2 green onions, sliced and chopped (optional)
1/2 green pepper, chopped (optional)
3 eggs, slightly beaten
1 C. light cream or milk
1/2 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. dry mustard

Bake unpricked pastry shell for 5 min at 425 degrees. Remove from oven and arrange cheese, bacon and ham in bottom of shell. Sprinkle with green onion and green pepper.

In medium bowl, combine eggs, cream, lemon juice, salt and dry mustard. Pour evenly over cheese mixture. Bake at 325 degrees for 45 minutes or until set. (If frozen, do not thaw, bake for 1 hour and 10 minutes). Remove from heat and let stand for 10 minutes before serving.
