Delicious Breakfast Recipes


Shara, Tawnya, Amy (Jeanie's daughter-in-law), Grandma, and I (Marsha) got to eat a yummy breakfast for lunch at Aunt Jeanie's house a while ago. So of course we had to get the recipes. Thanks for the great food, Aunt Jeanie!
Amish Breakfast

Saute, drain, and then set aside:

1 lb. sliced and diced bacon
1 small purple onion - diced

In a mixing bowl:

6 eggs slightly beaten
4 C. frozen hash brown
2 C. grated cheddar cheese
1/2 C. swiss cheese
1/2 C. small curd cottage cheese - blend
1 green or red bell pepper - chopped
salt and pepper

Add bacon mix and pour into a greased 9 x 13 casserole dish. Bake at 350 degrees for 35-40 min. just until set. Cool for 10 min. before serving.

Bobbi's Apple Pancakes

2 medium-size green apples
(Jonathan or Granny Smith),
peeled, cored, and chopped
2 eggs
2 Tbsp sugar
2 Tbsp butter, softened
2 cups evaporated milk
2 cups Bisquick All-Purpose baking mix

Mix all the batter ingredients in a large bowl. Spoon onto a greased pancake grill or frying pan and cook over medium-high heat. Serves 4.

Cinnamon Syrup

2 cups light corn syrup
4 cups sugar
1 cup water
1 Tbsp cinnamon
2 cups evaporated milk

Combine all ingredients except the milk and bring to a full boil in a medium-size pot. Cook for 2 minutes, stirring constantly. Let cool a full 5 minutes. Add milk, and serve warm.

Fruit Salad Sauce
Boil for 2 min. and cool:
1 1/2 C. sugar
2 C. water

Add:
1/2 tsp orange zest
1/2 tsp lemon zest
1 C. orange juice
1/2 tsp rum flavoring
2 tsp lemon juice

Chill in refrigerator. Serve over any variety of fruit.

Jamba Juice Wanna-be

I think I made the best homemade smoothie I've ever had...

I added:

some blueberries
some peaches
some strawberries
a little orange juice
a lot of ice

Blend and serve.

Almost like going to Jamba Juice with out the price!

Home Canned Cherry Pie Filling


You can use fresh red grapes or cherries!

6 quarts red grapes
7 cups sugar
1 and 3/4 cups clear jel or cornstarch
9 1/3 cups cherry juice (you can use water, but the cherry juice gives it much better flavor!)
1/2 Cup lemon juice
2 teaspoons almond extract
red food coloring
Prepare jars and canner bath. Wash and stem grapes. Mix sugar and cornstarch. Add liquid ingredients. Bring to a boil then add the grapes and boil about 5 minutes and thickened. Put ingredients in 7 quart jars then into boiling water bath for at least 30 minutes.

Fresh Peach Pie

I know Shara already posted a Peach Pie recipe, but I thought I'd post this one too (and I like it better)! I figured that's okay to say since she's actually the one that found this one too! I feel this one sets up better and I also like the sliced peaches instead of mashed. I just finished making 3 for Jed's management meeting at work today (he peeled ALL the peaches) and I made one yesterday for FHE treats.

1 c. water
1 c. sugar
4 TB. cornstarch
2 TB. lemon juice
1/4 c. butter
4-5 sliced peaches

Combine water, sugar, cornstarch, lemon juice, and butter and cook until thickened. Cool. Add peaches and put in a pre-cooked pie crust (we like the shortbread pie crusts)!



Don't forget to top with whip cream. We LOVE cool whip in a can! Tastes like the real stuff!

Dutch Apple Oatmeal (with peaches instead!)

I'd much rather be eating dessert, but if you HAVE to eat something healthy every now and then (like oatmeal), you might as well make a yummy variation of it. My mom sent us this recipe the other day, and I decided to make it for breakfast while Amy was here this weekend.

We thought it was good -- creamier than regular oatmeal, and we loved the vanilla and cinnamon flavors. I had peaches on hand, so we used those instead of apples, but I think apples would be better in this recipe. The recipe says to add the apples at the end, but Amy and I thought they might be good cooked with the oatmeal, too. I've never given oatmeal this much thought before!
DUTCH APPLE OATMEAL
1 1/4 C rolled oats
1 1/2 C milk
1 1/4 C water
1/4 tsp salt
1 to 2 apples, chopped
honey (optional)
1/4 tsp cinnamon
1/2 tsp vanilla
Place oats, milk, water, and salt in a sauce pan and let stand 10 minutes. Bring to a boil. Reduce heat and simmer 10-15 minutes until oatmeal is thick and creamy. Stir in apples and honey, vanilla and cinnamon.

CHICKEN AND DUMPLINGS

APPLE DUMPLINGS (Tawnya found this recipe on : thepioneerwoman.com). They are soooo good!
4 Granny Smith Apples - slice each in quarters and peel
2 cans Crescent Rolls (Pillsbury works best)
Roll up each piece of apple in crescent roll. Put in 9x13 pan.
Melt 2 cubes butter/margarine
Add 1 1/2 cups sugar to butter and 1 tsp. vanilla
Stir slightly and pour over apples. Sprinkle with cinnamon.
Pour 1 can of Mt. Dew, Sprite, Ginger Ale, etc. over apples.
Bake 350 degrees for 40 minutes.
Serve warm with cream or ice cream.
YUMMO!

Peach Pie


Fresh Peach Pie
1 cup sugar
3 T cornstarch
1/4 to 1/2 cup water (depends on how juicy peach are)
Mix together then Add:
2 large mashed peaches.
Cook for 5 minutes until mixture boils, or in microwave until mixture is thick stirring after every minute (this is what I do.)
Add:
1/2 tsp vanilla
2 T butter.
Cool thoroughly. Slice 3 large peaches in a cooked pie shell (or if you are lazy like me a boughten shortbread crust). Pour cooled mixture over sliced peaches. I normally let it set for a little bit and then serve with lots of whipped cream. This is one of my favorite pies.
I bought a box of peaches from somone that Grandma knew. I cut them all up and put them in the freezer for ice cream/crepes, or just peaches and cream or whatever else. I've made jam before, and I love it, but Aaron prefers strawberry. Besides, I don't have a freezer big enough to store jam. :)

Crepes With Fruit and Whipped Creme



We had these this morning for breakfast. Yum, Yum. The kids snacked on the leftover crepes all day, just plain. I used fresh peaches, but you can use frozen fruit, too. Some people fill them with eggs, sausage, etc. I've never tried that, but it sounds good.



Crepes
by Amy

2 C. flour
4 eggs
1 C. milk
4 Tbsp. sugar
1 C. water
½ tsp. salt
4 Tbsp. butter or margarine, melted
1 tsp. vanilla (optional)

In a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt, butter, and vanilla; beat with mixer until smooth. Batter will be runny. Heat a lightly oiled round pan over medium heat. Pour or scoop batter onto the pan, using approximately ¼ C. for small pan, ½ C. for bigger pan. Tilt the pan with a circular motion so that the batter evenly coats the surface of the pan. Cook the crepe for about 2 minutes or until the bottom is lightly browned. Loosen with spatula, flip and cook 2 minutes or until lightly browned on other side. Serve hot with fruit and whipped cream. Can serve with anything you wish. Leftovers may be frozen with waxed paper in between each crepe.
