Peanut Butter Popcorn

Isn't this picture just too wonderful?! Erin wanted her hand in the picture.

Madelyn came over to help me out the other day, and she asked if she and Erin could make peanut butter popcorn. I said sure, thinking that I wouldn't eat much of it myself. But I was wrong - it was delicious! I kept snitching some here and there.

Here's the recipe:

PEANUT BUTTER POPCORN

2 qts. popped popcorn (one bag of microwave popcorn worked well)
1/2 c. sugar
1/2 c. light corn syrup or honey
1/2 c. chunky peanut butter
1/2 tsp. vanilla

Cook sugar and corn syrup to a rolling boil. Remove from heat and add peanut butter and vanilla. Stir until melted and smooth. Pour over popcorn, stirring to coat. Serve as is or form into popcorn balls.

And what would a recipe post be if I didn't say ENJOY! at the end.

Peanut Butter Balls


These were yummy. Next time I make them I am going to add chocolate chips to them.


I doubled this recipe because I knew they would go fast.


1 cup quick oats

1 cup peanut butter

1 cup non-instant dry milk (cannery kind), or 1 1/2 cups instant dry milk

2/3cup honey

1 tsp. vanilla

1/2 cup coconut flakes


Mix all ingredients and use a cookie scoop to make balls onto waxed paper. Chill in refrigerator.

Caramel Corn Pops

I LOVE these! And they are so, so easy. (And they are much easier on the teeth than popcorn!)







1 - 8 oz. bag of "Barrel O' Fun Corn Pops (in the chip department)

1/2 c. butter (1 stick)

1/2 c. corn syrup

1 c. brown sugar

1 tsp. baking soda

Boil butter, corn syrup and brown sugar for 2 minutes. Remove from heat and add soda - stir to cause foaming. Pour over pops. (add cashews or peanuts if you like)

I omitted the next step:

( put it in the oven at 250 for 45 minutes stirring every 10 minutes. Pour onto wax paper. Break apart)

Peanut Butter Apple Dip


If you already like peanut butter on your apples, you'll probably love adding cool whip to it. If you don't like peanut butter on your apples, try this anyways - it's easy! Plus, school is starting and the kids need something yummy when they get home.

Amy and her kids loved it the other week when they were here. Our kids were trying to eat the dip all by itself as well.

Peanut Butter Apple Dip

1/4 C. peanut butter
1 1/2 C. Cool Whip

Grab a spoon and mix it well! If you want more peanut butter, feel free to play around with this recipe until it is the consistency that you like.

Award Winning Salsa!

Jen and her girls made some salsa for a ward party and they got first place! Way to go! (Jen's husband and boys made some salsa as well, so the girls beat them!) Jen got this recipe from her sister-in-law, Randi. It's a simple recipe -- just what I like. When I made it the other day I didn't have petite diced tomatoes, just regular ones. So I put my salsa in the blender after I made it to puree the tomatoes. We loved it.

Here's the recipe:

2 large cans petite diced tomatoes, drained (28 oz)
1 bunch cilantro, chopped
1 can El Pato sauce
3 or 4 limes, squeezed
1 bunch green onions, white and green part
a lot of garlic salt

Frito Dip


This is another recipe I got from Jen. I actually made it wrong. It was still good, but I'm sure it's better the right way. I didn't look at the recipe close enough before I went shopping and I didn't buy enough of the dried beef. So I only put half of what it called for. And I accidentally put in twice as many onions as it calls for. What's up with my lack of following instructions?!?
2 (8 oz.) pkg. cream cheese
garlic powder (not salt)
8 oz. Sour cream
pepper
1-2 Tbsp. dried minced onion
5 oz. dried beef, diced (this is Hormel brand, on the canned meat isle at the grocery store, in a little jar.)

Soften cream cheese in microwave and combine all ingredients. Heat in a dip crock pot or bake until hot and serve with fritos.
